It's a while since you asked this David, so you might have it sorted, but just in case, or for anyone else:

1. In the Users area create a new user with your chosen name, password and email.
2. Assign the role Administrator to this new user.
3. Log out of your Wordpress dashboard.
4. Log in with your new user name.
5. In the Users area you will now be able to delete the old admin username. As you do it will give you an option to assign all posts to your new username, so agree to that and everything will look tickety-boo!
