I just wonder with all the money making blog and blogs with ads and all the millions of blogs, how can one make money with blogs with all the competition?

Lots and lots and lots of effort and time.

And if they're not putting lots of time and effort into it, then they're likely scraping content, which is just wrong. You won't make money overnight, but if you really want to make money, you 'can' if you learn all you can, put it all to use, and put the elbow grease into it.

Use keyword tools like nichebot or wordtracker to locate low competition topics, then start a blog around those topics.

You can launch an entire blog around a niche topic that you can literally own in google. You'll get high rankings fairly quickly, but make sure it has some decent search volume so you eventually get traffic.

Creating a blog on a topic that you are passionate about will help you to write better content. I would suggest that you write on a topic that doesn't have a lot of competition.
