Meta tags confuse me :)

Hi, I was thinking, about my cookbook blog,
The Gaffer's Cookbook
I am of course pretty new to blogging.
I have built personal websites for years, but never had the desire to meta tag them. So the concept is new to me and I need some advice.

What sort of meta tag structure is used?
The way I understood it, is that I should list keywords from the blog or site content.

I'll give you a sample of the Gaffer's Cookbook
and please let me know if this looks about right for a meta tag listing?;

variety, culinary, the Gaffers cookbook, food, dining, cooking, chef, chefs, chicken, beef, taters, potatoes, spinach, asparagus, Brussels sprouts, broccoli, rice, cous cous, yams, sweet potatoes, curry, green curry, red curry, Thai, oriental cooking, Mexican cooking, Italian cooking, French cooking, fine dining, common foods, comfort food, microwave, recipes, recipe, Christmas dinner, thanks giving dinner, easter dinner'

Everyone has their own opinion on this........ I would create a small list of global ones (site wide) and then create a few for each post. Make sure that when you pull the page source and look at your tags that the words are actually one the page! On a blog try some of the SEO plug-ins.

Make sure you don't forget to title your pictures with tags.
