Once the plugin is installed you can head over to Write A Post in WordPress and you'll see just below the text field box (the area you type in your content) a drop down menu for Platinum SEO.

It's there that you will be able to type in the article's own Title, Description, and Keywords.

In answer to the above question

Generates all SEO relevant META tags automatically but Lets you override any title and set any META description and META keywords, for any post or page

I agree with ThemeLab on this. That's a fork of the all-in-one SEO plugin.

Don't totally rely on SEO plugins - use keywords repetitively in your blog entries. Add rss feeds of others' blogs that are of the same subject/topic as that of your own blog. Make sure you have a Google site map too. Submit your site/blog's RSS feeds to RSS directories like Chordata.info
