I've installed WP on my site, now its time for a template and some plugins.

The obvious ones are askimet, all-in-one-SEO and adsense-deluxe. Are there any else I should consider?

i would suggest a few that i use:

1. Cool Player -
Let you add any type of media like video and mp3 into your blog.

2. Share This
Let your visitors submit a post/page to social bookmarking site like digg, del.icio.us. etc.

3. Ultimate Google Analytics
Use Google Analytics to track your blog traffic. Can track external links and download links.

4. Wordpress Database Backup
This is an important must have plugin to backup your wordpress database. It save me from wordpress problems many times.

5. WP-Useronline
Show you how many users are on your blog with some info like which page they are visiting and either they are subscibers, guests or search bots.

6. Exec-PHP
You will need this to run PHP code in your posts, pages and text widgets.

7. and 2 powerful plugins for SEO purpose i use on my site.

I would like to add this 404 plugin I just installed to the ever growing list.

It adds google ajax powered search to your 404 pages. You will need a google search api.

All good info. I am currently thinking of what plug-ins I need. I just installed "Share This" (for the social bookmarking) and "If You Liked This" (for referring readers to other pages on my blog). So far, I like them both.
