For "podcasting", you want to encode into an MP4 file which is compatible with iTunes and other video podcast feeds. Uploading it to YouTube, Vimeo or any of the various video sites doesn't require are specific format in most cases. But why encode it to more than one format? Simpy encode it to MP4 for iTunes compatiblity then upload that to your favorite video site (or your web site).

BTW, many "over the counter" video programs will encode to QuickTime/MP4 format including Ulead VideoStudio, Sony Vegas and other low end video editing programs for the PC. Or, you can just buy QuickTime and encode from that.
