Default Using Tags, Labels and Categories in a Blog

You're right using tags, labels and categories in a blog is a good way to seperate things. Most blogs however have some type of niche and talk about a bunch of different things within it. Others talk about everything and anything. I agree with you though about the labels and categories and the odd personal story is good as it lets readers have a better idea about the author.
